Strawberry Pie

A few weeks ago a fellow yogi brought this pie to share after class and I've been wanting to make it ever since!  I remember eating this pie as a little girl at Shoney's restaurant.  Anyone else remember that place?

The one thing I love about this pie is that it doesn't require the oven.  Can I get an amen to that with this heat spell we've been having?

Assembling this pie is easy.  You do need to plan ahead to give it time to set in the refrigerator.  

Here's what you need:

1 lb. fresh strawberries
1 cup sugar
1 cup water, boiled
2 tbsp.cornstarch
1 box strawberry flavored gelatin mix
1 ready made graham cracker pie crust

Instructions

Yields: 1 pie, 8 servings

1. Remove stems from strawberries and slice the berries horizontally.  Place them into the graham cracker crust.

2. In a saucepan, combine sugar and cornstarch and combine completely.  Add boiling water and dissolve mixture.  Next, bring mixture to a boil over medium heat, stirring frequently until slightly thickened.  Once thickened, remove from heat and let cool.

3. Once cool, add gelatin mix and stir until combined.  Pour mix over strawberries until filled just below the rim of the pie.  (You will most likely have a small bit of mixture left over.)  Cover pie and refrigerate for at least 4 hours until pie is set.

  2. Shoney's Big Boy!!! Holy cow i haven't thought about that place sine i was a kid. I don't remember the strawberry pie, but it looks delicious and so pretty. Amen on the non-oven useage! Holla.

  3. Man, the meals shared at Shoney's. Haha! What a great flashback. I used to kill their salad bar. I've never made a strawberry pie, it looks so beautiful, and no baking involved? I'm sold!
